Espresso Crumb Coffee Cake by @loveandoliveoil
Ingredients:
For Crumb
• 6 Tbsp unsalted butter, melted
• ¼ cup granulated sugar
• ¼ cup packed light brown sugar
• 1 cup AP flour
• 4 tsp instant espresso powder *we omitted cuz kids*
• ¼ tsp ground cinnamon
• Pinch fine sea salt
For Cake
• ¼ cup unsalted butter, room temp
• ½ cup granulated sugar
• 1 lg egg, room temp
• 2 tsp vanilla extract
• ½ cup full fat sour cream, room temp
• ½ tsp baking soda
• 1 cup AP flour
• ¾ tsp baking powder
• ½ tsp fine sea salt
For Espresso Glaze
• 1 cup confectioner’s sugar, sifted
• 2 Tbsp freshly brewed espresso
• Pinch fine sea salt
Directions:
1. Preheat oven to 350℉ and butter an 8x8 inch square baking pan. Line with parchment and lightly butter.
2. Make topping: melt butter and mix in sugar until even. Add flour, espresso powder (if including!), cinnamon and salt and mix until dough comes together. Set aside and let cool.
3. In the bowl of your KitchenAid Stand Mixer, cream butter and sugar together until fluffy, ~2 mins. Add egg and mix until incorporated. Mix in vanilla.
4. Mix baking soda with sour cream; whisk baking powder and salt in with flour.
5. Add half dry ingredients to batter, followed by half sour cream, mixing well after each addition. Scrape down bowl, then repeat with remaining flour and sour cream until just incorporated.
6. Spread batter into prepared pan. Crumble topping on top.
7. Bake for ~30 mins or until a toothpick comes out pretty clean. Place pan on a wire rack to cool.
8. Glaze: sift powdered sugar into a bowl. Add espresso — brewed freshly from your @kitchenaidusa Fully Automatic Espresso Machine — and whisk until smooth.
9. Drizzle over cooled cake and let set before cutting into squares and serving.
